Chicken in Garlic Sauce

Makes 4 servings.

  • 4 chicken breast halves, skinned and boned
  • 1 tablespoon olive oil
  • 4 cloves garlic, crushed
  • 1/2 cup chicken broth, salt free if available
  • 1/2 cup dry white wine
  • 1 cup fresh sliced mushrooms
  • Salt and pepper,to taste
  • 1/4 cup chopped fresh parsley

Saute chicken in oil 2 minutes on each side. Add garlic. Stir in broth and wine. Bring to a boil; reduce heat to simmer. Add mushrooms. Cover and cook 5 minutes, or until pink color is gone and chicken is done. Do Not Overcook. Add salt and pepper to taste. Remove to a platter and sprinkle with parsley.
