Sugar-free Marinated Cucumbers & Onions
Makes 10-12 servings
- 2 cups water
- 1 cup vinegar
- 1 1/2 teaspoon salt, or to taste
- 1 tablespoon liquid sweetener
- Pepper to taste
- 3 medium (8-inch) cucumbers
- 1 large onion, sliced
Combine water, vinegar, salt, liquid sweetener and pepper. Pour mixture over sliced cucumbers and onions; stir well and refrigerate 12 to 24 hours before serving.
