Pumpkin Bars
Makes 24 servings.
- 1 cup sugar
- 2 tablespoons Sugar Twin sweetener
- 1/2 cup vegetable oil
- 2 eggs
- 2 egg whites
- 2 cups pumpkin
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon cloves
- 1 teaspoon ginger
Combine sugar, Sugar Twin, oil, eggs, egg whites and pumpkin. sift together dry ingredients and add to pumpkin mixture; stir until blended. Bake in 9x13 inch pan sprayed with non-stick spray at 350 degrees for 25 to 35 minutes.
Frosting
- 1 8-oz. package light cream cheese
- 2 cups powdered sugar
- 2 teaspoons vanilla
- 1 teaspoon soft margarine
Mix together and spread on cooled pumpkin bars.
