Quick Taco Bake

Makes 6 servings

  • 1 pound ground round
  • 1 can (15 oz.) tomato sauce
  • 1 envelope (1 3/4 oz.) taco seasoning mix
  • 1 16 oz. can corn, drained
  • 1 package (7 oz.) Jiffy corn muffin mix

Place ground round in 1 1/2 quart microware-safe casserole. Cook in microwave on full power for 3-4 minutes, or until ground round is no longer pink. Stir halfway through cooking time. Drain. Combine remaining ingredients with ground round, except muffin mix. Prepare muffin mix and spread over the meat mixture. Bake in preheated oven at 400 degrees for 15 to 20 minutes.
